Back-to-School Peaches & Honey Popsicle Recipe
Summer break might be over but the sweltering weather won’t be for another month or so. Treat the kids to a homemade and good-for-you whole fruit popsicles after a hot and hard day of studying at school. Get creative with this basic recipe and change out the base and fruits to add variation and flavor!
Serving Size: 6 popsicles
Ingredients:
2 chopped ripe peaches
6 tablespoons honey
Dash sea salt
2 cups of yogurt
1 tablespoon lemon juice
½ teaspoon vanilla extract
Instructions:
1. In a blender or with a hand mixer in a bowl, combine yogurt, honey, lemon juice, and vanilla extract. Adjust amount of honey and vanilla extract to your taste.
2. Use a spoon to gently fold the peaches into the mixture.
3. Use the spoon to transfer the mixture into the popsicle mold. Insert popsicle sticks and freeze for at least four hours.
4. When you’re ready to eat the popsicles, first run warm water around the outsides of the molds for about ten seconds before gently removing the popsicles.
